I am rebuilding my Fuel Pump for my Drifter 400. It is a single in/single out pump. In watching the video below, I see that there are two gaskets and a diaphram for each "cap." My rebuild kit also has two of each type of gasket. However, when I pulled my pump apart, there was only one gasket and one diaphram per side, not two gaskets and one diaphram per side. Is there a reason why there may only be one per side (for a certain flow/capacity) or should there be two per side?

One of each per side is correct according to the parts manual.
